Hello everyone, I hope you are all well π I have to admit that I am feeling very bad last 2 days. I needed to leave earlier yesterday as I was horribly dizzy and it has not stopped until now. Apparently severe vertigo, as doctor said. I have never heard of it before, so it was surprise for me.. well, it has caught me in surprise as well. I was not able to drive back home as well, so my car is parked at work. I have been given some medicine so hopefully, it is going to help and I am still going to hospital for some additional tests… So hopefully, everything is going to be fine π
Well, and I have found this not yet published courgette blueberry loaf cake. I made it for our Mexican family when they were still around and that day brings me very ice memories β€
What do you need:Β
2 large eggs
1 medium courgette
250 g blueberriesΒ
250 g lactose free curd
1/2 cup of vegetable oilΒ
1 cup of sugar caneΒ
1 and 1/2 cup of self – raising flour
1/2 tsp baking powder
2 tsp cinnamon
1 tbsp vanilla extract
1/4 tsp nutmeg
baking paper or butter for the baking tray
Firstly, preheat the oven to 180 degrees. Prepare your baking loaf tray and spread butter around or as me, put baking paper. Peel and coarsely grate courgette. Take one bowl, whisk eggs together with oil, vanilla extract and sugar cane. Afterwards, add grated courgette with blueberries and mix everything properly together. At the end, add small pieces of curd. In second bowl, mix the rest of ingredients. Stir the dry ingredients into the bowl with courgette and afterwards, pour the dough into the loaf baking tray. Bake in preheat oven approximately 40 minutes, however check if the dough is already done.
And last thing – serve and enjoy this deliciously summer cake! I love the addition of courgette as it brings nice moist texture of cake and blueberries – simply belong to summer.
