Monday again. New week. And as usual after the weekend, I am cleaning my fridge from leftovers so I can refill it again with new ones 🙂 As the weather here in UK is just beautiful (proper summer!) we tend to have lot of BBQ with beef and loads of vegetables. This weekend, it was not different… When I was driving home, I was listening BBC radio and one of the topics was “what to do with leftovers from BBQ” and I see it quite easy – use them to prepare delicious dish with “super food touch (quinoa!)”. And here is one of the ways!
What do you need:
250 g quinoa (I have chosen mixture of 3 types)
1 beef steak (as the last piece for BBQ no one wants)
handful of cut green and red bell peppers
Himalaya salt and pepper
Firstly, take a big Wok pan, add vegetable oil and sliced onion. Fry it for couple of minutes and in the mean time, cut into thin slices beef steak and add pieces into the pan. While is meat frying, take another pot and add cup of quinoa and approximately 2 cups of water. You can add finely chopped basil leaves, pinch of Himalaya salt and cook it until done. Get back to the Wok pan and add sliced peppers together with sliced courgette. Season it with soy sauce, Himalaya salt and pinch of pepper. Cook everything until is the meat soft and tender. When is meat ready, serve with quinoa topped with Feta cheese and fresh basil leaves.
At the end – enjoy quick dinner and empty fridge from leftovers!
