I love my weekends. One of the reasons why is that my husband prepares breakfast during the weekend and I simply love it 🙂 And this weekend was not any different. We tend to eat lot of eggs and potatoes for breakfast (I love start of the day like that). So, eggs flamenco were prepared!
What do you need:
6 eggs
4 medium / large sized potatoes
100 g green peas
1 red bell pepper
1 onion
2 garlic cloves
6 pieces of bacon or ham
pieces of chorizo
200 ml tomato sauce / puree
virgin oil
fresh parsley / basil
For start, peel potatoes and cut them into smaller pieces. Take a big pan (suitable for oven) and add virgin oil. Afterwards, add cut potatoes and together with green peas. In the mean time, chop finely onion and bell pepper. Add crushed garlic into the pan, followed by cut bacon and chorizo. Cook everything together until are potatoes soft and tender. Pout tomato sauce together with finely chopped parsley (basil) into the pan and stir properly. At the end, pour 3 tomatoes on top and put the pan into the oven (180 degrees) for 10 minutes.
Voila! Breakfast is ready and you can serve with fresh parsley or basil on top and tortilla with avocado aside 🙂 I wish I had weekend every day 🙂
