It has been some time I have not even appeared here. My dad has arrived to visit us 🙂 and to take care of our little monkey. So I am very happy about it and spending lot of time with all my men. However, I am still doing lot of things in my kitchen and little garden. And as a sweet treat, I have prepared little “cakes” with strawberries as for me – strawberries are just part of summer time.
What do you need:
500 g puff pastry
3 tbsp water
1/2 cup sugar cane or brown sugar
1 tbsp cinnammon
2 cups strawberries (or other fruits)
1 tsp vanilla extract
1/2 handful of fresh mint
I have started with strawberry (fruit) preparation. Take a pot, add washed and cut pieces of strawberries, three spoons of water, followed with sugar cane or brown sugar, vanilla extract, ground cinnamon and finely chopped mint. Heat it up and cook everything together until is sugar melted and all mixture is nicely soft and a bit thicker. In the mean time, preheat the oven to 180 degrees and prepare puff pastry. I have not prepared pastry by myself, I bought it. However if you want, you can definitely make your own. When you have one like me, sprinkle the flour into the rolling board and roll the pastry into thin pieces which you can cut into small rectangles. When is fruit mix done, add it on the top of each piece of pastry. Afterwards, fold corners of pastry tightly together. At the end, spread egg on top of each piece. You can now put all pieces (which are placed on baking tray with baking paper) into the oven and bake approximately 20 minutes or until golden.
And then… your sweet fruity treats are ready to eat… if fancy, together with ice cream 🙂
