Time is just flying! It has been while I have posted something. Lot of is going on at this moment… Last week, my husband celebrated the fact that he is getting older and this dish was his birthday dinner 🙂 Together with white wine and cheesecake afterwards.
What do you need:
500 g salmon
1 cup Basmatti rice
250 g green beans
250 g cherry tomatoes / 8 – 10 salad tomatoes
300 g asparagus
handful of fresh basil leaves
Take a bigger pan and add oil. Heat it up and afterwards add green beans and small pieces of asparagus. Add cup of rice into the pan and mix everything properly. When done, poor 2.5 – 3 cup of water together with vegetable stock into the pan, add handful of fresh basil leaves and at the end add salmon pieces. I am not big fan of cooked tomatoes, so I did wait until the biggest amount of water is cook and added tomatoes at the end of cooking on top. The whole time, cover the pan with lid.
To finalize this dish, serve with white wine 🙂 And of course, enjoy! Quick, easy and delicious.
