    • Eggs and breakfast

      We love eggs for breakfast and mainly in different kind of variations and combinations. To be honest my husband is pretty good in looking for all those variations. This time it was not any different… I simply love our weekends and his breakfasts – they are easy, healthy, simple and delicious šŸ™‚

      What do you need:Ā 

      your favourite vegetables, our is – handful of mushrooms, handful of baby spinach, handful of cherry tomatoes, handful of fresh basil leaves

      4 large eggs (however it depends on how many people you want to feed)

      salt and pepper

      Preheat you oven to 180 degrees and take pot/baking tray suitable for oven. Wash and cut all your vegetables (mushrooms in slices, baby spinach in smaller pieces, tomatoes in halves). Spread and mix everything in baking tray. Top the vegetable mix with eggs, sprinkle with pepper and salt and place in the oven. Bake until your preference of eggs, how well done you like them. I prefer very runny eggs, so couple of minutes in the preheat oven is enough šŸ™‚

      You can serve with corn/wheat tortillas and guacamole (for me the best combination)!

    • One pot: Slow cooked chilli pulled pork

      New week again and great weekend is past. I hope you as well had a great weekend. On Saturday, I went out with my husband and our friends. We were supposed to go to a concert however it got cancelled so we went for dinner instead. We got recommendation for Mexican restaurant. The food was good, however the price was ridiculous. Well… so afterwards, we visited German pub with good beer and good German food. And on Sunday we have spent good family time together, celebrating our little boy. I prepared car cake and never again šŸ˜€ It was very difficult and it took me so long…

      So what did I prepare for my family this time – slow cooked pork with red rice šŸ™‚

      What do you need:Ā 

      1.5 – 2 kg pork shoulder joint

      3 peppers

      1 large onion

      8 – 10 tomatoes

      1 chicken/vegetable stock

      2 garlic cloves

      chilli flakes/chilli powder (optional)

      ground cumin

      sweet paprika powderĀ 

      basilĀ 

      400 g red kidney beans or mixed beansĀ 

      400 g chickpeas

      salt and pepper

       

      What do you need for red rice:Ā 

      3 – 4 tomatoes

      1 tbsp tomato puree

      1 – 1.5 cup rice

      vegetable oil

      Firstly, cut 6 slices and season it with ground cumin, sweet paprika powder and crushed garlic. Optionally, season with chilli powder or chilli flakes as well. I did not use that much because of my little boy, however feel free… Finely chop onion, cut peppers into small pieces and cu tomatoes as well. When you have all vegetables cut, place it into the slow cooker pot and mix it properly. At the end, place meet on top and gently push into the vegetables, add vegetable or chicken stock and cover with lid. Cook in slow cooker on low for 9 – 10 hours. Afterwards, add tin of beans and chickpeas, mix everything together. Season with salt and pepper if need and sprinkle finely chopped fresh basil leaves on top. Break pork with two forks and you can serve with red rice. Add rice into pan with vegetable oil. In the mean time, finely cut tomatoes and add them into the pot with rice and stir everything together. Add water (I usually use 1.5 time more water than rice) and start cooking. When you start with cooking, add tomato puree and stir everything together and let it cook until soft.

      At the end, when everything is ready, serve and enjoy šŸ™‚

    • Mexican Tilapia fish dinner

      My evenings almost all the same and I do not mind. When I came back from work I spend time with my little “big” boy who has turned 2 yesterday ā¤ šŸ™‚ And who loves blowing the candles as I found out just yesterday as well šŸ˜€ šŸ˜€ We had a great evening and when my little boy went to bed, I was looking to prepare something quick. So if you are pressed for time this Mexican feast is pretty quick, approximately 30 minutes, healthy, nutritious and delicious!

      What do you need:Ā 

      4 Tilapia fish fillets

      2 garlic cloves

      limeĀ 

      chilli powder (mild or hot, depends on your preference)

      salt and pepperĀ 

      1 cup rice

      400 g beansĀ 

      4 tomatoes

      few slices of German salami

      2 avocados

      1 onion

      vegetable oil

      Firstly, season your fish with chilli powder and garlic cloves. You can pan fried the fish, however I have chosen steam cooker and steamed fish for 15 – 20 minutes. When your fish is getting ready, prepare in the pot rice. In the other pan, prepare refried beans. Add oil in pan, beans (I used mixture of canned black and white beans) and small pieces of German salami together with 2 finely chopped tomatoes. Mix everything properly and let it fry for 10 minutes. Keep mixing so it will not get stuck to the pan. Afterwards, mash beans and added ingredients together in pan and keep frying for next 7 minutes. When ready, prepare guacamole šŸ™‚ Put 2 avocados into the bowl together with finely chopped onion and tomatoes. Mash and mix everything together. Now just wit for rice to be cooked and fish to be steamed and you can serve this delicious dish. If you like, serve with spicy salsa and sprinkle lime on top of your fish.

    • Baked chicken with cream spinach

      Hello everyone!

      I hope you all had a great weekend. We had very nice time – sunny (!) and it was just recharging and autumn is coming as temperatures have dropped. But I like this period of time – everything is colourful šŸ™‚ But as we had such nice weather here, I did not spend much time in kitchen as my husband was excited and did BBQ whole long weekend šŸ™‚ So I am sharing with you one of the summer dishes – one “pot” baked chicken as I am big fan of one pot dishes.

      What do you need:Ā 

      750 g chicken breasts

      6 potatoes

      1 cup rice

      400 g chickpeas

      250 g baby spinach

      250 ml lactose free creamĀ 

      sweet paprika powder

      fresh basil leaves

      salt and pepperĀ 

      vegetable oilĀ

      Firstly, preheat the oven for 200 degrees and prepare baking tray or pot suitable for oven. Cut chicken breast into slices and marinate them in bowl with sweet paprika powder and vegetable oil. When ready, put all pieces into the tray. Wash potatoes, leave skin and cut them into slices. Add them into the tray as well together with cup of rice, chickpeas and baby spinach leaves. Stir everything and mix everything together. Season with salt, pepper and fresh basil leaves. At the end, pour cream into the tray together with 1 – 2 cups of water and mix again. Cover with lid or aluminium foil and place into the oven. Bake approximately 1 – 1.5 hour or until ready. And – serve šŸ™‚

      I hope you all have started a great weekend! ā¤ I am really happy to have free weekend as previous couple of weeks have been very tiring for me… So we are going to enjoy it a lot as the weather here is very nice too and my husband is about to start with BBQ šŸ™‚

      I have decided to share a post from Carol which I truly like and at the same time this problem somehow annoys me – food waste. Myself, I am in a field where I am focusing to sustainability. I am working in construction industry as a cement and concrete technologist, in R&D, developing sustainable building materials with the aim to reduce CO2. Have you known that concrete is the second most produced material in the world after water production? And that cement production is one of the biggest ones with the biggest amount of CO2 produced? Therefore, we are trying to reduce and offer new binders, without cement with massive CO2 reduction, but with the same properties as normal concrete which you can see around you… And probably in relation with that, I am as well looking at all kind of waste. One of them is food waste and plastics. I have been checking analysis every year and massive food waste producer is UK. I was annoyed when we were living in the block of apartments with shared rubbish bins and I saw so much of food waste. Even full take away boxes. Incredible. I am trying to have as minimum as possible of food waste and use all leftovers whenever we have some.

      And plastic… It is almost impossible to find here a store where you can find food not wrapped in plastic!! I do not understand why cucumber has to be wrapped in plastic cover? As well as the rest of fruits and vegetables? So even if you would want to reduce plastics at your home, you cannot that easily. You are forced with big store chains, if you do not have small stores, open or farm markets around.     • Flaky pastry pesto chicken with orzo

      Friday! Finally! šŸ™‚ I love my job, I truly do but I am incredibly looking forward to weekend and time with my boys. It seems it is going to be sunny weekend (however you never know here in UK) and my husband wants to do one of the last BBQs before winter. Other than that, we do not have plans… just have a rest and enjoy time together. Do you have plans for upcoming weekend?

      One of the “gym days” I have prepared this quick chicken – inspired by Jamie Oliver as you do not need many ingredients and it is pretty quick.

      What do you need:Ā 

      320 g puff pastry

      4 chicken breasts

      green pesto or you can prepare you own as I did: handful of baby spinach, handful of fresh basil leaves and 2 tbsp of Greek yogurtĀ 

      400 g cherry tomatoes

      400 g green beansĀ 

      1 cup orzo

      1 egg

      sweet paprika powder, salt and pepper

      vegetable oil

      Firstly, preheat the oven to 200 degrees. Afterwards, unroll the pastry and prepare 8 equal strips. Cut chicken into smaller pieces, place them into the pan seasoned with sweet paprika powder, salt and pepper. Fry it until well done. Afterwards place all pieces into the bowl and mix together with pesto. If you have ready one it is easier, however home made one does not take too much time and it is very easy. Take baby spinach leaves together with basil leaves and place them into the blender. Start blending and after few second stop and add Greek yogurt and blend again for few seconds.

      Place chicken pieces on top of puff pastry and wrap it well together. Spread whisked egg on top of the wrap and place into the oven to bake. While is chicken getting in the oven, put orzo to cook and place green beans together with cherry tomatoes into the same pan as you prepared your chicken. Cook until are vegetables soft and pasta al dente.

      When you have everything ready – you can just serve and enjoy this nice dish. If you do not want to add orzo, it is perfectly fine šŸ™‚
