I have been catching up with your amazing posts this week 🙂 And as well with Carol’s continuous posts about food waste and which I truly like to read and see that someone really cares… I visited last week one of the “zero waste shops” without plastic wraps, bags, etc and I was amazed ❤ For you, who lives in UK and are interested in, check the list of these kind of shops 🙂

As my dear friend is vegetarian she has brought lot of interesting dishes to our kitchen. One of them is this vegetarian dish with eggplant and will definitely become part of our kitchen as well 🙂 However, my husband was a bit complaining that we ate too much vegetables and he is missing meat 😀
What do you need:
8 large eggs
4 garlic cloves
2 tsp turmeric
salt and pepper
1.5 cup rice
Firstly, wash the eggplants, preheat the oven (200 degrees) and place both eggplants into the oven. Bake approximately 20 minutes or until very tender. Once they are ready, take them out and when cooled down, remove the skin. Afterwards, mash the eggplants in bowl with fork. When done, prepare big pan. Add vegetable oil and heat it up. Add crushed garlic cloves and turmeric and stir it for couple of minutes (do not burn it). Add eggs with salt and pepper and make scrambled eggs. When done, remove from the pan. Add a bit of more oil and add mashed eggplants and finely chopped tomatoes. Cover the pan with lid and cook until the liquid is evaporated. In the mean time cook your rice in other pot. As soon as are the vegetables sticking to the bottom of the pan, add eggs. Stir everything properly together until well combined. Now… wait for rice to be cooked and serve.
Definitely new vegetarian dish for me, but very delicious!
