As my friend here was for a while we tried to adjust food as much as we could 🙂 One of the dishes I have prepared this time was a testy warm lentil salad inspired by Jamie Oliver and his ingredients cookbook.
What do you need:
500 g canned tuna
1 lemon
500 g tenderstem broccoli
1.5 cup (500 g) green lentils
Greek yogurt
Firstly, soak the lentils in pot for at least an hour and afterwards start cooking until soft. You can cook them straight away, however it is going to take slightly longer. Afterwards, I have prepared broccoli in steam cooker (for 15 minutes). In the mean time, squeeze lemon and mix the juice with Greek yogurt. When are lentils ready, serve them and mix them with tuna, top with steamed broccoli and Greek yogurt. If I had chillies I would slice them on top 🙂 However, very delicious dish! So… enjoy this quick dinner ❤

Original recipe from Jamie Oliver:
50 g tin anchovies in oil
1 preserved lemon
400 g tenderstem broccoli
1 – 2 fresh mixed chillies
2 x 250 g packets of cooked lentils
Put the anchovies and their oil into a blender with 1 tablespoon of liquor from the preserved lemon jar and a splash of water. Blitz until smooth, loosening with a little more water, if needed.
Trim the broccoli and blanch in a large pan of boiling salted water for 3 minutes or just until tender, while you quarter the preserved lemon and trim away the seedy core, then finely chop the rind. Finely slice the chillies. Drain the broccoli, return to the pan over the heat and toss with the lemon, most of the chilli and 1 tablespoon of extra virgin olive oil. Add the lentils and toss for 2 minutes, the divide between plates, drizzle over the anchovy dressing and scatter with the reserved chilli. Finish with 1/2 tablespoon of extra virgin olive oil.
