I hope you all had a great weekend! I did 🙂 My best friend is visiting us and I have not seen her almost 2 years and it is great to be together. She is staying for a week, so I am enjoying it a lot! But together with that, my kitchen is having completely different “twist” as she is vegetarian and I do not really know how to cook that way… sooo 🙂 I have been trying my best and so far things are turning pretty well… as well as this delicious breakfast.
What do you need:
your favourite vegetables – 200 g baby corn, 250 g green peas, handful of baby spinach, 1 potato, 1 – 2 medium carrots
4 large eggs
1 tsp Vegeta
additionally: tomatoes, avocado, tortilla
Very simple, delicious and quick breakfast for weekend 🙂 Take a big Wok pan firstly and add all you favourite vegetables (baby corn, green peas, baby spinach, carrot, potato and if you have and like, add broccoli and cauliflower) together with vegetable oil and Vegeta powder and fry everything together until soft. When ready, place everything in big flat pan, spread everything and place 4 eggs on top (depends on for how many people will the breakfast be). Afterwards, cover the pan and let it cook until your eggs are ready as it depends on your preference. I love runny egg, however I did not prepare it this time.
