And my dad left back to Czech Republic… It is always a bit sad when our families go back home. This time it was not different and a bit more difficult as our little one has gotten attached to him and did not understand why is grandpa going different direction and not with us to car and back home… After my dad’s amazing cooking skills and being spoiled last week, I decided to prepare spicy tortellini soup (I have made one already some time ago). Nothing difficult and nothing heavy at the end of the day.
What do you need:
400 g tortellini (ricotta, spinach, chorizo or whichever you prefer)
200 g mushrooms
3 pieces of bay leaves
vegetable stock (vegetable or chicken broth)
handful of fresh basil leaves
I took a big soup pot for preparation this time. When you have a pot, add olive oil and cut pieces of sausages together with finely chopped onion. Let it fry until is onion nicely golden. Afterwards, add mushrooms and carrots until soften. Afterwards, add enough water together with vegetable stock (if you have vegetable or chicken broth, even better) and add bay leaves. Cook approximately 20 – 30 minutes. When water starts boiling, reduce the heat and simmer the soup. At the end, add tortellini and cook until are tortellini done. To finalize, you can add salt and pepper at the end or like my husband, spicy salsa. When serving, top with Parmesan cheese and basil leaves. You can serve as well together with bread, however it is purely up to your taste buds.
