    • Pescado a la Veracruzana (Fish Veracruz)

      Hello my blogger friends,

      this time our kitchen was full of Mexican mood and flavours. We love fish, however many times I struggle how to prepare it. So this time I have been browsing in my husband’s country and prepare Veracruz – style fish (tilapia). It is one of the less spicy dishes of Mexican cuisine – delicious.

      What do you need: 

      6 pieces white fish (tilapia) 

      6 larger tomatoes

      1 bigger onion 

      2 – 3 garlic cloves

      green olives

      capers

      jalapeno chillies – optional

      1/2 tsp dried oregano

      vegetable stock

      chilli olive oil 

      1 cup rice

      I start with tomato salsa preparation and always the same way. Take a pan, place tomatoes, onion and garlic cloves and let it burn. In Mexican cuisine you do not need to worry about burning ingredients for salsa preparation. It gives it such a good taste. Once you have it done, put everything in blender and blend it until smooth, together with vegetable stock. There are different ways of preparing salsa and one of them you can find here.

      Pour salsa into the bigger pan, add oregano and if you fancy add chillies at this point as well. Cook approximately 8 – 10 minutes and add olives and capers. Afterwards, add frozen or fresh white fish (we like tilapia, cod or haddock), cover with lid and cook until is fish done (approximately 15 – 20 minutes). When is salsa cooking with fish, start with rice preparation as well.  At the end – serve and enjoy!

      I love burritos! So much, if I can be honest 🙂 However, where we live now… you cannot find a single burrito unless you make it home. The closest good one burritos are in centre of London. So sometimes, I ask my husband to bring me one when he goes from work or just make one… or two 🙂 And – this shared recipe is definitely inspiration.

      Before I knew my husband and his family, I did not have any clue about Chipotles or Chipotles in Adobo… Not at all. In Czech Republic it is not common thing, I would say that the rest of Europe has knowledge gap as well… So, I am really happy to share this post. For you, who are not familiar with that as I did not as well… Chipotle is smoked dried jalapeno and adobo means “marinated”, it is basically sauce composed from different kind of spices which was initially used and food preservation… Definitely something to try! 🙂 ❤

    • Red pork pozole soup

      Hello my friends!

      I hope you all had a great weekend! Mine was very quick and finally, we are having back our little monkey. I went to Czech Republic to pick him up after 2 weeks with his grandparents… and he has grown. It is incredibly how many changes you can see when your little one is not with you for a while ❤ But now, we are back. And just before I went to Czech Republic I decided to prepare pork red Pozole soup – amazing Mexican soup. When I had it for the first time I was not really sure if I like it, however with time… I can eat it a lot. And as the weather is getting really “wintery”, soup is just perfect. Check as well recipe here, in Mexican Food Journal and get inspired 🙂

      What do you need: 

      500 g pork 

      500 g hominy

      1 onion

      1 tbsp hot chilli tomato paste

      3 garlic cloves

      fresh parsley

      4 bay leaves

      1 vegetable stock

      1 tsp cumin

      handful of cabbage

      limes

      radishes 

      vegetable oil

      Firstly, have a big pot (as this soup is really delicious 🙂 ) and add vegetable oil. Afterwards, cut pork meat into slices and finely chop onion. I got a pork medallions, however you can get the one you really like. Chicken will be good instead of pork as well. Heat up the pot with oil and add chopped onion, slices of pork together with grounded cumin, garlic cloves and bay leaves. Let is fry for couple of minutes. As I did not have  ancho chiles, I used hot chilli tomato paste and it worked perfectly. So when you fry meat for couple of minutes, add drained hominy, chilli paste and stir everything together. Afterwards, add water together with cut cabbage, vegetable stock and finely chopped parsley. Cook for approximately 45 minutes or until is the meat soft and tender. When ready – serve with fresh parsley and finely cut radishes on top. You can squeeze lime and enjoy explosion of flavours.

      Just today I have bought Chipotle Mayo in store. We bought it coincidentally couple of weeks ago (when I wanted to grab something completely else) for BBQ. And it was one of the best mistakes I have ever done 😀 I have absolutely fallen in love with it and while having a bit of time and reading all your posts, I have came across this recipe for Chipotle Mayo!!! And as soon as we finish the bought one (which is not going to take that long), I am definitely going to try this one. Nothing is better than the homemade one…

And as we have changed from Spanish and not thinking Spanish anymore, we think more about Mexican and I am constantly thinking what I am going to prepare.
