Hello my friends!
It has been already some time I have posted something and I am packed with pending things, to be honest. However, as our Mexican family is arriving tomorrow (!) I have been very busy lately. Time flies incredibly fast and mainly when you have things to do 🙂 And as I am finishing preparation for our family, I am thinking about something delicious Mexican to prepare in Czech Republic while visiting my family 😀 As well my work is going incredibly well and I have been loaded with amazing projects… Once I finish today’s dinner (as we have just something simple) I am going to update you what’s going on in my kitchen, In the mean time… Check this amazing Mole sauce. I have already shown you other type of Mole sauce and this one is as delicious as previous one!

And Thursday again! 🙂 How come, I do not know. However weekend almost here and we are planning to “hunt” for used wooden garden furniture or wooden pallets so I can make something creative and funky for our garden 🙂 I am very excited. Yesterday, I spent morning in hospital just for my yearly check – up since I was sick years ago and guess what – if yesterday’s results are good I am going to be completely discharged! Great news. So afterwards, we went with my little monkey to children’ s center so he could have fun too and then shopping together with my aupair and spent proper “girl’s” afternoon. At the end… when we were about to leave the mall, Nando’s caught my attention so we had dinner there and brought as well to my husband, who absolutely loves it. So no cooking, no working… just nice day in the middle of the week.
And as I had free day yesterday I had proper breakfast – eggs with fried tortilla. However, this shared article explains it better than me and those pictures are simply amazing. If you need any inspiration for weekend, get inspired 🙂 Definitely delicious breakfast!

Happy new week, my friends! 🙂 Hopefully, you all had a great weekend. We did! And… I am “spamming” again with something incredibly delicious and Mexican – steaks with salsa verde ❤ Please, have a look and get inspired with this share.
We are going on holiday soon, actually this week. We are going to Czech Republic as we did not go during the Easter break and I cannot wait, I am really looking forward to it 🙂 Family and relaxing time is waiting. Even my grandma from Slovakia is coming to see our little monkey. And we have planned some time together with my husband as well, just us with “beer wellness”. Ah yes, you are reading correctly, however I will tell you more once we go. It has been Christmas present from my parents for us so it is time to “use” it 🙂

Almost the end of the week. One of my college is leaving today, unfortunately. Very nice guy who has been with company for many years and reached as much as he can within his position.. I have worked with him only shortly, but he will be missed here. For him it means new beginnings and that’s exciting. It reminds me my late situation 🙂 All of here are going to have lunch together with him (just pizza, but good idea) what I found really nice! And while I was preparing myself in the morning to work and thinking about today’s day, I found this delicious recipe behind!!! ❤ I wish, I could have this instead the pizza 😀

I absolutely agree with statement “nothing beats a homemade corn tortilla”. My husband is pretty good with that… From time to time, he does prepare corn tortillas during the weekends.
You just need few things for preparation: masa harina, pinch of salt, cold water and olive oil and tortilla press. Mix everything together and make a nice dough, not to dry, not to “watery”. Split the dough into smaller pieces, cover it and let it rest for couple of minutes in the fridge. Put the cling film in tortilla press, then dough and press. You can cook tortillas straight away with lightly oiled pan.
If you like tortillas, give it a go and try by yourself. It is definitely worth it. Have a look in shared post below!

Almost there! I mean – almost long weekend 🙂 Do you have plans for long Easter weekend? We do not at the end. We were about to go to Czech Republic, but prices for flight tickets are insanely high (sometimes 300% higher), which is making me upset, but I cannot do anything about it. So… we are staying at home, Czech Republic visit will be in April and we will spend nice family weekend together. I hope the weather prediction is going to be wrong as well 😀 as they are predicting snow again.
And while having a lunch break and reading your posts… Albondigas has caught my eye! 🙂 Albondigas are nothing else than meatballs. You can find them not only in Mexico, but in Latin America and in Spain (“famous” albondigas with tomato sauce). I am sure there is as many variations as there are people who prepares them 🙂
