Don’t you know what to do with beetroot? I do not. I love it, however I am struggling with ideas, how to prepare it or what to do with it. As we have now a “juicing” month, beetroot is great in juices and I have full fridge of it. I have just made juice combining beetroot, carrots, oranges and apples. Delicious! However, do not put too much of beetroot, it “burns” 🙂 It is known, that beetroot is one “those” great vegetables which helps with cardiovascular health and in my case – my hands are not cold anymore. So.. that’s one of ways, I like to “eat” beetroot, however other than that… I am struggling.
I love beetroot as a side when having risotto. That is something amazing for me, since I was kid 🙂 Not that long ago, Sophie from Foodzesty posted her beetroot salad which I am going to try and I am still looking for an inspiration. I have found the salad bellow and it does not sound bad at all as well. And… if you have any great ideas for recipes, anything is welcome!! ❤ I will appreciate it.

New day again! 🙂 However, mine has not started that great. But I am laughing about it now already… When I was driving to work, my car suddenly started to do strange noises and weirdly acting and I was not sure if I would be able to make it to work. It got worse so I needed to stop in the middle of my way to work and thought “what a hell is going on”. I called to my boss that I might me late to work. Then I called my car insurance, then my garage and waited around 30 minuted. I switched on the car again afterwards and like nothing has happened 😀 I was happy too early… Just before arrival to work, it happened again and this time with “amazing” engine light on and I knew, I am in troubles… So I went to my collegues and asked for help. These guys are simply great and I appreciated their help so much. We took the car to the garage where we maintain company cars and now… I am waiting for their call. However I wish I could have more patience 😀 I am kind of annoyed as well as I had my car just last week for service and check up and paid quite lot of money for it…
Aaaand while waiting… having silly and cheap sandwich for lunch as I have forgotten my Spanish tortilla at home (!! silly me), I am dreaming about Mexican torta which is incomparable to sandwiches here (have a look below) 🙂 And secretly hope that it is not going to be something serious with my car.
Well, at least I am not hungry and I keep smiling 🙂 Hopefully, you had better start of the day than me.

I absolutely agree with statement “nothing beats a homemade corn tortilla”. My husband is pretty good with that… From time to time, he does prepare corn tortillas during the weekends.
You just need few things for preparation: masa harina, pinch of salt, cold water and olive oil and tortilla press. Mix everything together and make a nice dough, not to dry, not to “watery”. Split the dough into smaller pieces, cover it and let it rest for couple of minutes in the fridge. Put the cling film in tortilla press, then dough and press. You can cook tortillas straight away with lightly oiled pan.
If you like tortillas, give it a go and try by yourself. It is definitely worth it. Have a look in shared post below!

With rainy days and recovering… Beetroot juice / smoothie is not that bad option 🙂 Have you ever tried it? Is it superfood? I am always looking for good combinations. Some of them suits me, some of them not… However this one is one of the good ones at least for me. And here is the link with other options to try!

Do you like Chia seeds? I do. I have fallen in love with those little “things” 🙂 It is not that long time ago I have came across with Chia seeds and now I usually use them for baking and different types of cake or as a pudding. However, when we had our Mexican aupair, she prepared herself this refreshing Chia lime water many times. I cannot say if it is pure Mexican thing, however you can find it Mexico and Central America (and even Mayas and Aztecs knew benefits of this superfood) ❤
And now, I have started with it as well… Mainly when busy day in the lab is in front of me, I have a bottle with me to boost me up 🙂
