I have just bought flight tickets to Czech Republic for our holiday in June when my husband’s family is going to be in Europe as well. So.. we have decided to spend some time together with both parents 🙂 And while thinking about my next post and reading your posts, I have came across this great avocado tips 🙂 I have fallen in love with avocado because of my husband as in Czech Republic this fruit is not common at all and when you find it, it is pretty expensive. Now, I eat them almost every day with delicious food or just by itself. Precious fruit ❤

New day again! 🙂 However, mine has not started that great. But I am laughing about it now already… When I was driving to work, my car suddenly started to do strange noises and weirdly acting and I was not sure if I would be able to make it to work. It got worse so I needed to stop in the middle of my way to work and thought “what a hell is going on”. I called to my boss that I might me late to work. Then I called my car insurance, then my garage and waited around 30 minuted. I switched on the car again afterwards and like nothing has happened 😀 I was happy too early… Just before arrival to work, it happened again and this time with “amazing” engine light on and I knew, I am in troubles… So I went to my collegues and asked for help. These guys are simply great and I appreciated their help so much. We took the car to the garage where we maintain company cars and now… I am waiting for their call. However I wish I could have more patience 😀 I am kind of annoyed as well as I had my car just last week for service and check up and paid quite lot of money for it…
Aaaand while waiting… having silly and cheap sandwich for lunch as I have forgotten my Spanish tortilla at home (!! silly me), I am dreaming about Mexican torta which is incomparable to sandwiches here (have a look below) 🙂 And secretly hope that it is not going to be something serious with my car.
Well, at least I am not hungry and I keep smiling 🙂 Hopefully, you had better start of the day than me.

Hello my blogger friends!
I have been on holiday in Czech Republic and as well I taken couple of days off from blogging. It is refreshing, but I miss it at the same time. I have been reading your posts just today and still lot of to catch up with. Our holiday has been great so far and recharging. However, free days are ending tomorrow and we are travelling back to UK and again in working process. And… I can share with you my memories from this visit afterwards 🙂 (with information about beer wellness which was absolutely amazing!!) ❤
Hopefully, you had a great weekend too and started new week with smile! Let me share with you Mexican enchiladas below. I have prepared “classical one” here in Czech Republic as my parents love to try something new and… I am secretely preapring them for next year holiday with us in Mexico 😀 However this recipe is slightly different than I am doing and maybe, I will give it a go. I am sure, it is delicious 🙂

Almost the end of the week. One of my college is leaving today, unfortunately. Very nice guy who has been with company for many years and reached as much as he can within his position.. I have worked with him only shortly, but he will be missed here. For him it means new beginnings and that’s exciting. It reminds me my late situation 🙂 All of here are going to have lunch together with him (just pizza, but good idea) what I found really nice! And while I was preparing myself in the morning to work and thinking about today’s day, I found this delicious recipe behind!!! ❤ I wish, I could have this instead the pizza 😀

I absolutely agree with statement “nothing beats a homemade corn tortilla”. My husband is pretty good with that… From time to time, he does prepare corn tortillas during the weekends.
You just need few things for preparation: masa harina, pinch of salt, cold water and olive oil and tortilla press. Mix everything together and make a nice dough, not to dry, not to “watery”. Split the dough into smaller pieces, cover it and let it rest for couple of minutes in the fridge. Put the cling film in tortilla press, then dough and press. You can cook tortillas straight away with lightly oiled pan.
If you like tortillas, give it a go and try by yourself. It is definitely worth it. Have a look in shared post below!

I needed to think for a while what is my favourite place. I have probably couple of them, however…. Mexican Cancun is on top of the list. This place is really far from us at this moment and it always brings me great memories. It was my first big “work trip” out of European continent when I was working in Switzerland and I have fallen in love. I did not stay in real touristic Cancun, but in “Mexican” Cancun, with people who live there years and offer delicious Mexican food, not that much influenced by tourists… Now, it is our favourite family holiday destination with our best friends (even when I was in third trimester we visited this beautiful place) and kids around, creating great memories… ♥
