Weekend is for me relaxing time and cooking for family. This time I have chosen something very simple a very “Czech”. Czech Republic has very nice “mold” cheese – something similar to well know Camembert. However over there it is called Hermelin and it has white mold. I personally prefer Hermelin than Camembert as the taste is slightly milder. In Czech Republic is very common to grill this cheese or have it deep fried in breadcrumbs 🙂
What do you need for the dish:
“mold” type cheese (4 pieces for 4 people)
1 can breadcrumbs
4 eggs
6 tbs flour
potatoes (I usually use 2 per person)
1 – 2 onions
vegetable oil
What do you need for Chipotle mayo:
1/2 cup mayo
1 tbs water
1 – 2 tsp lime juice
pinch of salt
1/2 tsp chilli powder
1 tsp paprika powder
1/2 Chipotle powder
Firstly, preheat the oven to 190 degrees, slice potatoes and put them into the baking tray together with slices of onions and vegetable oil. Cover the baking tray with lid or with aluminium foil and put it into the preheated oven and bake it approximately 1.5 hour or until soft. When is your potatoes getting ready, you can prepare mold cheese for frying. Prepare 3 plates – one with flour, second one with whisked eggs and pinch of salt, third one with breadcrumbs. When you plates ready, put cheese from one plate to another and cover it firstly with flour, followed by egg and at the end covered with breadcrumbs. Take a frying pan, fill it with oil and heat it up. However start with frying just before are potatoes ready to eat as cheese preparation take just couple of minutes.
In the mean time and while waiting for potatoes, prepare Chipotle mayo. I have fallen in love that Mexican mayo as it brings a bit of spicy touch of prepared food. So, firstly take a bowl and place all ingredients for mayo preparation in. However, be measured with Chipotle – you can always add more. Start with smaller amount 🙂 Afterwards, whisk everything with fork until smooth. Taste it and spice it more if you prefer and you can serve together with deep fried mold cheese and baked potatoes!
