    • Shrimp (chicken) fried noodles

      I have been browsing my camera and found pictures of this dish from December last year (!), almost a year ago so let me share it now. Just thinking about that dish I think it was one of the last times I actually ate shrimps or any seafood. I know that you can find many different opinions about being pregnant and shrimps… but the other hand – being chemist gives me certain opinion as well and I preferred to avoid some type of food, such as seafood. However, I cannot wait to have another seafood dish soon 🙂

      What do you need: 

      750 g shrimps / chicken

      750 g noodles

      2 carrots

      spring onions

      pak choy

      2 eggs

      3 garlic cloves

      Soy sauce 

      lime

      vegetable oil 

      optionally – fresh chillies

      Take a big Wok pan, add oil and shrimps. Fry it until are shrimps done – nicely pink. In the mean time peel and grate carrots and chop spring onions into bigger pieces. Remove shrimps / chicken pieces from the pan, leave the oil and add grated carrots, spring onions, crush garlic cloves, pak choy and add them with vegetables. When done, stir everything properly and fry couple of minutes. Add Soy sauce according to your taste (I usually add 2 – 3 tbsp) and squeeze half of lime into the pan. Stir everything together and add shrimps / chicken pieces back in pan. Fry it for couple of minutes and while waiting, prepare noodles. I usually have dry one, which I usually leave for 2 minutes in boiled water and then add them into the pan and stir with shrimps and vegetables. At the end, move mixture on side of pan, add 2 eggs and start to stir with noodles – small portions until you have everything mixed and eggs are done. Now is your dish ready to serve topped with black sesame seeds if you fancy and optionally with chopped fresh chillies, sprinkled with the other half of lime 🙂

      Our weekend was in symbol of simple cooking – no more than 5 ingredients. Actually, I has been idea of my husband. As I tend to go to the gym few times a week in the evening I do not usually cook afterwards (or at least nothing difficult and fancy) and most of the time we have sandwich or quesadilla. So, my husband ordered a cookbook with 5 main ingredients recipes. It is actually very interesting and I wanted to prepare pasta with 5 ingredients and then I saw the recipe and “I am missing 4 of them” 😀 Well… so improvisation has started and here we go with noodles.

      What do you need:

      750 g noodles (which ever you prefer – I have gone for rice noodles)

      350 g spinach

      150 g ham or bacon

      250 g mushrooms

      5 eggs

      seasoning – curry powder, turmeric, salt and pepper

      Easy, tasty, quick… those are words for this dish and busy mummies. Firstly, take a big pan (for example Wok) and add oil, spinach, ham or bacon together with sliced mushrooms. Heat it up and fry it approximately 10 – 15 minutes. When are mushrooms ready, take everything out, so just a bit of oil stays in the pan. If you do not have enough of oil, add slightly more together with curry and turmeric powder (1 tea spoon of each). Fry 2 minutes and add 3 eggs. Fry until done. Afterwards, add spinach and everything what was previously fried in the pan and do not forget to put noodles as well. I have chosen this time rice noodles which were not necessary to boil. However always double check with recommendations on the package as you may cook them before adding them into the pan. So then, I fried everything together for 7 minutes and at the end add 2 left eggs and stir everything together, However, do not fry too long as you want to have nicely creamy noodles.

      And then… just eat and who needs, you can season is with salt and pepper at the end and maybe top with parsley? 🙂

    • Chicken – shrimp Lo Mein

      I am huge fan of Chinese food – mainly noodles 🙂 However, we do not go for Chinese food out. Mainly for few reasons – we have not found any good in our new place yet, after my “poisoning” experience with Chinese take away couple of weeks after my little one was born… I kind of tend to avoid it and rather prepare it at home. Sooo, I have decided to make noodle dish today. And as weekend’s weather is horrible, why not to spend some time with cooking 🙂

      What do you need: 

      600 g rice noodles 

      2 courgettes

      1 red bell pepper

      2 buk choy

      2 garlic cloves

      2 pieces of chicken breasts

      300 g shrimps 

      1/2 cup fish broth

      soy sauce

      fish sauce

      lemon juice from 1/2 lemon

      hot chilli sauce – optional 

      salt and pepper

      Firstly, cut chicken breasts into smaller pieces. In Wok pan, heat up oil and fry shrimps together with pieces of chicken breasts. In the mean time, cut courgettes and red bell pepper into smaller pieces. Afterwards, add fish broth into the pan, together with soy and fish sauce. Cook it for couple of minutes and then take it out from the pan and leave it. Add vegetables into the pan and fry it for 5 – 10 minutes. Add shrimps with chicken pieces, add crushed garlic cloves, salt, pepper and soy sauce (if needed). After chicken, shrimps and vegies are cooked, add rice noodles into the pan. I have bought this time “ready” ones so I did stir it for 3 – 4 minutes and the dish was ready to eat 🙂

    • One – pot green curry

      One of the comfort food for dinner again! One – pot curry. Every day when I am going back home I am thinking what I am going to cook and prepare. My husband is eating pretty everything, he is absolutely amazing with that – no leftovers, no thrown away food… Great eater. However now… one more person at home and she does not like to try too many new things. Therefore, I am trying to catch her taste 🙂 And with this dish, I did 🙂

      What do you need: 

      350 g prawns

      400 g rice noodles

      sliced ginger

      3 garlic cloves

      2 tbsp green curry paste

      vegetable stock

      1 1/2 tbsp olive oil

      3/4 cup almond – coconut milk

      2 carrots

      1 pepper

      2 handfuls of chopped lettuce

      1 handful of chopped mushrooms

      black sesame seeds

      salt and pepper

      Take a big Wok pan, add oil and fry sliced ginger with crushed garlic cloves until golden. Add green curry paste and bring it to boil (as it has small amount of water included). Afterwards, add prawns and cut mushrooms, water with vegetable stock and bring it to boil. Once boiled, add almond – coconut milk and let it boil again. Reduce the heat and let it simmer. In the mean time, cut the rest of vegetables – pepper, carrots and lettuce. When ready and curry is boiling, add vegetables and rice noodles. Cook it approximately 4 – 5 minutes, you can add salt and pepper according to your taste if needed. When ready, serve it with sprinkled black sesame seeds on top 🙂 Simple, easy and delicious. The whole preparation will take you around 35 minutes.

    • Boxpark Croydon, Coqfighter and Bang Bang – Street Food review

      After the first working week, we went to the center of Croydon to show to our new aupair how does her new part of her life look like and what she can find around. And at the end of the day, we ended up in Boxpark again so I can have gotten opportunity to review other street food. This time, I did not know what I want. Woman, simple. So I went for Vietnamese fried noodles from Bang Bang and my husband chose chicken burger from Coqfighter Chicken & Beer.

      Vietnamese cuisine is quite famous in the Czech Republic as Vietnamese are the largest immigrant community and third ethnic minority over all.  Vietnam has gone through long phases of war and political conflict, as well as cultural shifts, the vast majority of the Vietnamese people have been living in poverty. Therefore, the ingredients for Vietnamese food are often very inexpensive but nonetheless, the way they are cooked together to create a yin-yang balance makes the food simple in appearance but rich in flavour and it reflects their lifestyle.

      However, unfortunately I did not pick typical Vietnamese food but I am sure, I am going to do it next time. As in Boxpark was football match ongoing we picked beer as our drink. Czech Staropramen. When you enter Bang Bang, not long menu is waiting for you – as I really prefer that so you do not need to go through many things and quickly pick what has caught your eye. And so did! I love noodles, I can eat them over and over. So I picked fried Pho noodles with chicken. However, you can pick from different types of noodle dishes such as non – spicy soups and spicy soup with rice or vermicelli noodles or vermicelli noodle salads.

      My husband went this time for fried chicken burger ‘Green chilli cheese’ from Coqfighter. You are warmly welcomed there and I have to say, menu is as well simply and easy to pick. I am really big fan of it.

      And how was it over all? Fried noodles were delicious full of flavour and I would definitely get them again. However next time, I am going to try any other of Vietnamese noodles there. And burger? I do not usually go for burger and if I can pick something instead I would do it. But! This fried chicken burger was soooo good. This ‘quite young’ company and its street food in Boxpark in Croydon has gained my ‘burger’ admiration!

    • Fried rice noodles with beef and baby buk choy

      I love rice noodles. And mainly this dish. I have great memories when I used to live in the Netherlands and lived my good Chinese friend P. We had our Friday dinners in one good Chinese restaurant in Eindhoven until it was closed. During those days, while walking to have dinner we were discussing what we are going to eat. But! We always ended up having the same dishes – fried rice noodles with beef and baby buk choy (my favourite dish) and spicy fish (P.´s favourite dish and recipe is coming soon). It was so embarrassing that even waiters already knew what we are going to eat 😀 But I do not regret. And as I am not living in the Netherlands anymore, I have decided to prepare it at home.

      What do you need for 2 portions:

       rice noodles

      500 g beef (I bought roast beef)

      3 pieces of baby buk choy

      8 pieces of spring onions

      soy sauce

      chilli powder and cayenne pepper

      himalaya salt and pepper

      oil

      Firstly, chop the meat in thin slices, put them in a bowl and add 2 spoons of soy sauce, chilli powder and cayenne pepper. Mix everything properly together. Prepare big Wok pan, add spoon of oil and heat it up. When ready, add meat and fry it until soft. I add a bit of water to boil it, however I do not think it is the proper Chinese way. When no water remains, take the meat out of the pan. While the meat is frying, chop spring onions in bigger pieces and separate leaves of baby buk choy. When the meat is ready, take it out and put it aside. Add into the pan chopped vegetables and fry it just a bit. Then add meat again. At this point, I add salt and pepper and mix it properly. Afterwards, take everything from the pan out and clean the pan.

      When vegetables and meat is ready, preparation of noodles can start. I used the one which has to be boiled for 3 to 5 minutes. However, the fresh ones will be great as well. When the noodles are boiled, rinse them with water and spread them one buy one so they do not stick together. It remains as well like that during frying so they will be evenly mixed with meat and vegetables. When the noodles are separated, take the Wok pan again, add spoon of oil and add noodles. But – do not stir them. Let them fry from one side until slightly brownish and then turn them with chop sticks. When nicely fried, you can and meat with vegetables and mix it together. Heat it up a bit and you can serve 🙂 Enjoy it as much as we did!
