Finally, spring has arrived to UK as well. Saturday was incredibly beautiful day and I was so happy to have at least one day without rain and cold weather. We had enjoyed it a lot, mainly spending the whole day in the garden as it needs a bit of love as it seems that people who lived here before did not do really much. At the end of the day, we had a delicious barbecue and to prepare something quick for sweet tooth I made rustic pear cake which is often made back in Czech Republic. We did not want to spend time inside, so it is perfect choice 🙂 Or if you have visitors and want to offer them something delicious.
What do you need:
1 puff roll pastry (quick option) or make your own pastry
8 pears (apples are as well possible)
4 tbsp unsalted butter
4 tbsp cane sugar
4 tbsp apricot marmelade
1 tbsp cinnamon
1 tbsp Marple syrup or Rum
Prepare baking tray with baking paper in it and preheat the oven to 200 degrees. Cut pears into halves, remove the kernels and cut into thin slices (you can peel the pears, however it is not necessary). Put the dough into the baking tray (if you have already bought one) and arrange pieces of pears. You can arrange it symmetrically, however when not it will taste great as well. Sprinkle with sugar and cinnamon and spread pieces of butter regularly on top. At the end, wipe the edges with egg. Optionally, you can sprinkle with Maple syrup or Rum. Bake for 20 – 25 minutes or until gold. Once removed from the oven and still warm, wipe the apricot marmalade on top with sprinkle of sugar. And you can serve… With tea, coffee or just like it is 🙂
