One of these days, when you have headache, difficult day and driving 80 miles during snowing… you do not want to prepare anything complicated, just something warm and comforting and simple. When I was parking, I remembered that one of dinners my dad used to prepare when we were kids – so called “farmer’s omelette”. So dinner was decided. I believe it can be found in many cuisines, with different names… 🙂
What do you need:
potatoes (I tend to use 2 potatoes per person)
good amount of chorizo
salt and pepper
tortillas for quesadilla preparation (with cheese or ham or both)
Once you have all ingredients, you can cut onion into small pieces, peel potatoes and cut them as well and the same with chorizo. Take a bigger flat pan (it depends on how many people is going to eat) and add oil. Heat it up, add onion and when it is golden add pieces of chorizo. Afterwards add chopped potatoes and let it fry until soft together with turmeric, salt and pepper. When ready, mix 8 eggs and pour them on top of the chorizo mixture. Reduce the heat and let it fry until well done and with help of plate, turn mix and let it cook from the other side as well. If you fancy, you can prepare in the mean time quesadillas. I like any type of it and cheese one goes very well with omelette.
So, when you have omelette ready, you can serve with quesadilla, tomato and avocado for example!
