Cold weather has came to UK as well and it just welcomes to do something simple and warm. I have decided to make really quick, 2 – ingredients (not including spices and herbs) creamy potato soup. My grandma used to prepare this soup during those days when we were kids and came from outside, frozen, full of snow and wanted to eat something quick and warm. If you are soup lover, give it a go… it is really easy. Even for my little monkey when we came home from the whole day out – was simply great!
As I mentioned, you do not need much:
4 bigger potatoes
250 ml double cream
3 bay leaves
salt and pepper
Take a big pot, add peeled and finely cut potatoes, water, vegetable stock and bay leaves. Bring it to boil and cook until are potatoes soft. Afterwards, add double cream and bring it to boil again. Let it simmer for 10 minutes, add salt and pepper according to your taste and you can serve 🙂 If is the soup too liquid, you can add spoon of flour mixed in water into the soup and let it boil for 30 minutes. And if you are in mood, you can prepare as well Benedict egg, it is delicious with it.
