I hope you all had a great week and even better weekend. Mine was just perfect. I had my birthday last week and my husband has been spoiling me a lot! 🙂 New week comes and tomorrow we are going to find out if we are going to have a boy or girl. Exciting!
My husband still continues with his salad/soup evening request so one of these days I have prepared quinoa salad, inspired by Greek quinoa salad – I just did not have all the ingredients, but sounds just delicious and it is super easy 🙂
What do you need:
1 red bell pepper
handful of radish
1 cup quinoa with bulgur (I prefer 3 types of quinoa)
1 garlic clove
Firstly, cook quinoa according to package directions – I usually cook 1 cup of quinoa with 1/2 cup of water. Take a different pan, add vegetable oil, crush garlic and fry it for approximately 30 s together with cumin and finely chopped onion. Dice tomatoes together with bell pepper and spinach and add into the pan. Add bit of water and cook until soft. Afterwards, add cooked quinoa into the pan, mix together until soaked. Season with salt pepper and fresh parsley. Your salad is ready and you can serve, topped with radish, sprinkled with Feta cheese and avocado aside.
