I am so behind my blogging! I have planned to do more work on my blog this week, but it has not happened, unfortunately… But in the other hand – my work is going just great and something has to go aside 🙂 I have brilliant news from work and I will share a bit later when everything is much more clear. The only thing what I can say now is that my real dreams are becoming true!!!! ❤
As the weather has gotten colder I prepare more and more soups. During the weekend I made sour cabbage soup – full of vitamin C and great for colder weekends. However, not everyone might like this soup. It has very strong sour taste and it is very different that you might be used to. My husband did not like it at the beginning at all, but now… 🙂 he is even asking for it. It is very typical Czech/Slovak soup as far as I know and for me it is Christmas soup (we tend to have it for Christmas dinner) 🙂 However here in UK, I do not prepare it often as I barely find really good sour cabbage.
What do you need:
500 g sour cabbage
250 g chorizo
4 bay leaves
5 pepper corns
beef broth or vegetable stock
Firstly, chop onion into small pieces and chorizo as well and put both into bigger soup pot. Heat it up and fry it for couple of minutes. Once you have sour cabbage (I usually have in glass bottle or in plastic bag), remove it from bottle or bag and cut it into smaller pieces/chunks. I like really sour taste, however if you prefer milder taste wash the cabbage in water before you cut it. Put it into the pot with onion and chorizo and stir everything properly. Afterwards add beef broth or water with vegetable stock and add bay leaves together with pepper corns. Now you can peel potatoes and cut them into small pieces and let everything cook until are potatoes soft. If needed, add salt and pepper, but soup is ready to eat at this moment 🙂
