Hello my friends!
It has been a while since I have posted something. I have been in conference in Leeds last week and arrived on Friday back home and enjoyed weekend with my family.
My work is going pretty well and I was asked to join an International Conference last week. I was very excited, to be honest. It has been a while since I have joined really good one. I joined couple of conference in last two years, but most of the time it was not worth joining. However this time… Great. I took my little one with me and our aupair as my husband was in Dublin for couple of days. So we had a trip! I was curious how my little monkey is going to sleep in “big hotel bed” and how it would go… but – everything absolutely fine and I was just worried too much. He was such a good boy. And my conference… even better. I have learnt new things, got many information, had a great discussions with people from different parts of world and to be fair – have gone to work completely recharged, more motivated and just excited about my work. So… that was the reason I was not even thinking about my blog as my head was full of science and research related to concrete technology and development of new sustainable building materials.
And now, I am happy to be back home with my husband and little one. I brought to my husband the world most spicy salsa 🙂 Near by my hotel there was a nice chilli shop and I was sure my husband would simple love that place. And he as a spicy lover – I had to get him something. I was recommended mentioned sauce above and my husband has tried it and apparently it is very hot. And at the same time he told me that it is different hot… not like insanely hot, but it has a good taste too. Sooo.. who ever fancy something very hot and spicy, please try this one 😀 Or… prepare something similar as mentioned below 🙂 During our warm summer we have lot of BBQ and all kinds of salsa is just part of our family traditions!

Over the week, I tend to do something very quick and comforting. And as well now as I do not feel that great as usual, even more. I have become an addicted to Mexican food and I wanted to prepare something nice and quick. Mexican casserole is good choice.
What do you need:
650 g minced beef
2 garlic cloves
hot chilli powder
1 cup rice
2 cups vegetable broth (vegetable stock)
1 can black beans
1 can sweet corn (or frozen)
salt and pepper
parsley or cilantro
1 1/2 cup cheddar cheese
1 1/2 Monterey Jack cheese
Firstly, take a big pan, finely chop onion and add into the pan together with minced meat and chorizo (Mexican or Spanish, whichever you prefer). Season the meat with taco seasoning, hot chilli powder and cumin. Cook the meat until brownish and black beans, sweet corn and rice. Mix everything properly together and add vegetable broth into the pan. Let it cook until is rice done and meat soft. If you need more water, add more. At the end, reduce the heat and add chopped tomatoes into the mix. Mix it briefly together and switch off the fire. At the end, top the casserole with grated cheese (both of them) and freshly cut parsley or cilantro. Let the cheese melt and serve! You can eat is with tortillas and avocado as we do like or just like it is 🙂

Weekend has arrived to our home as well. Yesterday, in the evening, I went to the gym. Since we moved, I did not have opportunity to go, but… I have started yesterday regularly again! ❤ It was very funny and good lesson – with hoop! My whole body nicely hurts today. I love that feeling after workout. And today, we have spent time day out as our little monkey had new swimming classes (and he feels already good!). I was very excited as it has always been our favourite activity… but… I am so disappointed 😦 It was nothing what I expected, the pool was incredibly cold for babies and the lesson… better not talk about it. So, I am going to look for other lessons. After the long day, the kale – broccoli spicy soup was not bad idea 🙂
What do you need:
350 g kale
100 g blue cheese
1 tsp hot chilli powder
salt and pepper
chicken broth (if you have it ready)
Take a big pot and boil broccoli and kale together until soft. When ready, let it cool down and blend vegetables together with cheese until smooth (I like to leave small pieces in soup, so pick your preference). Afterwards, put it back to the pot with boiled water, add hot chilli powder, salt and pepper and cook it for new 15 – 20 minutes, until a bit thicker. In the mean time, take a corn tortillas, slice them and fry them in the pan. And guess what? 🙂 You are ready to serve and you can enjoy this soup.

Happy Friday my friends!
Hopefully your week has been as good as mine. I am truly happy having a new job. However, it brings as well lot of hunger 😀 To be honest, I am just always hungry now and I yesterday I was missing vitamins, fruits. Soooo… I have tried this amazing Mexican fruit salad and it is one of the TOP I have ever had 🙂 However, my presentation was not that great as on pictures on this shared recipe. I was probably too hungry, too impatient…
Now, I am looking forward for weekend and spending more time with my little one and keep arranging the house slowly. And… my mum has arrived to help us a bit ❤

Spicy, spicy, spicy! This is definitely salsa which my husband loves! 🙂 If you are adventurous and spicy lovers, give it a try and check this share. Now, I have avoided cooking with too many spices as our new aupair does not like spicy food at all. Therefore, we have now many salsa to spice up our dishes 🙂 And… our little monkey has started to eat with us, so… adjustment for everyone!

As I am slowly getting ready to our trip to Mexico and while reading your amazing posts I have came across with Singapore Rice Noodles recipe so let me share it with you.
