Tuesday. For me very busy day, however positively busy as I am truly loving my job. And catching up with posts as well. I guess, this dish, I prepared when my husband’s family left back to Mexico. So it means already few weeks ago. I remember that it was on of the days when I went to gym after work and wanted to prepare something quick and delicious. And here we are 🙂 Steamed salmon.
What do you need:
750 g salmon (or amount of pieces depending on how many people eat)
250 g cherry tomatoes
200 g spicy Spanish chorizo
1 cup of rice
handful of fresh basil
vegetable oil, salt and pepper
As it is very quick, however delicious dish, you do not need that many things – 5 main ingredients for preparation. Personally, I love steamed fish or vegetables, therefore I have chosen to prepare salmon in steam cooker. If you have steam cooker, put your salmon pieces in there and set it up for 15 – 20 minutes. In the mean time, take a pot for rice preparation. Add one cup of rice into the pot, together with a few finely chopped basil leaves and teaspoon of oil. Heat it up, mix everything together and add two cups of water and cook until rice is soft. Afterwards, cut chorizo into slices and tomatoes in halves. Take another pan, add oil, chorizo and tomatoes and fry it approximately 7 minutes. At the end add fresh basil leaves. Wait until is rice and salmon done and you can serve!
