It has been a while since I have prepared tortilla Española and since we are quite potato lovers (mainly me 😀 ) I have gone for one with spinach. As I am breastfeeding again my little girl, I have started diet as soon as she was born to avoid lot of colic as I had it with my boy. And it went well. We have been just facing different thing – reflux and troubles with poo. So, I am really paying attention to my diet. If you want to check some of recommendations, they really work!
What do you need for medium/big sized, fluffy tortilla:
6 big potatoes
4 – 6 onions
300 g baby spinach
8 – 10 eggs
2 garlic cloves
Firstly, peel your potatoes. When you peel potatoes, cut them into small piece. I have learnt from next time that really small pieces are much better. When done, you can start frying them in the pan with enough oil. Let them cook until medium done (with medium heat). In the mean time, peel and finely chop onions and add them into the pan with potatoes, add all baby spinach leaves. Afterwards, take a big bowl and put all eggs in, whisk them with salt. when done, pour whisked eggs into the pan with potatoes, onions, crushed garlic and spinach. Fry everything in small heat. Try to prevent burning in edges with wooden spoon and slightly shaking with pan. Cook approximately 15 minutes from one side (however it depends on size of your tortilla, mine was quite thick). Afterwards, flip tortilla with help of plate and cook the other side next 12 minutes. And… then… just enjoy your tortilla!! ❤ My second tortilla was much better than first one, so pick your favourite one!

And Thursday again! 🙂 How come, I do not know. However weekend almost here and we are planning to “hunt” for used wooden garden furniture or wooden pallets so I can make something creative and funky for our garden 🙂 I am very excited. Yesterday, I spent morning in hospital just for my yearly check – up since I was sick years ago and guess what – if yesterday’s results are good I am going to be completely discharged! Great news. So afterwards, we went with my little monkey to children’ s center so he could have fun too and then shopping together with my aupair and spent proper “girl’s” afternoon. At the end… when we were about to leave the mall, Nando’s caught my attention so we had dinner there and brought as well to my husband, who absolutely loves it. So no cooking, no working… just nice day in the middle of the week.
And as I had free day yesterday I had proper breakfast – eggs with fried tortilla. However, this shared article explains it better than me and those pictures are simply amazing. If you need any inspiration for weekend, get inspired 🙂 Definitely delicious breakfast!

I absolutely agree with statement “nothing beats a homemade corn tortilla”. My husband is pretty good with that… From time to time, he does prepare corn tortillas during the weekends.
You just need few things for preparation: masa harina, pinch of salt, cold water and olive oil and tortilla press. Mix everything together and make a nice dough, not to dry, not to “watery”. Split the dough into smaller pieces, cover it and let it rest for couple of minutes in the fridge. Put the cling film in tortilla press, then dough and press. You can cook tortillas straight away with lightly oiled pan.

Weekend has arrived to our home as well. Yesterday, in the evening, I went to the gym. Since we moved, I did not have opportunity to go, but… I have started yesterday regularly again! ❤ It was very funny and good lesson – with hoop! My whole body nicely hurts today. I love that feeling after workout. And today, we have spent time day out as our little monkey had new swimming classes (and he feels already good!). I was very excited as it has always been our favourite activity… but… I am so disappointed 😦 It was nothing what I expected, the pool was incredibly cold for babies and the lesson… better not talk about it. So, I am going to look for other lessons. After the long day, the kale – broccoli spicy soup was not bad idea 🙂
What do you need:
350 g kale
100 g blue cheese
1 tsp hot chilli powder
salt and pepper
chicken broth (if you have it ready)
Take a big pot and boil broccoli and kale together until soft. When ready, let it cool down and blend vegetables together with cheese until smooth (I like to leave small pieces in soup, so pick your preference). Afterwards, put it back to the pot with boiled water, add hot chilli powder, salt and pepper and cook it for new 15 – 20 minutes, until a bit thicker. In the mean time, take a corn tortillas, slice them and fry them in the pan. And guess what? 🙂 You are ready to serve and you can enjoy this soup.

Hopefully, you have had a great weekend. Our was a bit busy… Lot of new things are happening, new adventures are coming. We have a new aupair since the end of last week as well, from Spain this time! We were looking for new house on Saturday and we found one! So… we are almost ready to move. And today, we spoke with our Mexican family, so I had a bit of sad mood as they are really far away. Our today´s dinner were quesadillas. And to introduce what are quesadillas, we had flour one, corn one and homemade one. However, I did not take such a beautiful pictures as it is shown in article below and where is nicely shown how it can be done 🙂 And together with that… recipe for Mexican tetelas is included! 🙂 Or in other words… other way how to like tortillas!!!

My Mexican adventure continues, however not for long anymore. Just few days and we are going back to grey and rainy UK. I am almost ready to go to bed and I was thinking what is my favourite from Mexican cuisine. I have to say that I really love Mexican breakfasts in general… It is always proper and delicious meal and you are not hungry soon. Most of the time we have breakfast here at home, however Mexicans love to eat outside. So let me share with you some examples of Mexican breakfasts 🙂
Mexicans love eggs and they can prepare it in many ways, together with fried beans and tortillas. Huevos Rancheros is one of the dishes and very common dishes. My husband tends to prepare it at home. The other type of eggs I really like are Migas Norteñas and its recipe shared below (shared via Mexican Food Journal). It contains fried stripes of tortilla and scrambled egg. On of these days, just before spending time in water and swimming pool, we had breakfast out as well. We have tried Huevos Rancheros con chilaquiles and salsa verde and Huevos Montados with tomato sauce as I did not want get hot 🙂
If you like proper breakfast, eggs and fried beans… Give it a go! 🙂 I have fallen in love with those kind of breakfasts. Soon, I am going to share with you breakfast taquitos! 🙂
