New week! For me it has started just today as we had a bank holiday here in UK, so a bit longer weekend with an amazing weather 🙂 I have taken this opportunity to do some work in the garden and we have spent one whole day in the ZOO (Paradise Wildlife Park) with our little one which was absolutely brilliant and we enjoyed it a lot. Even our auipar joined us and spent time with us there. It is incredible to see, how out little one is growing so quickly and everything new is just exciting. I have fallen in love with all his new expressions and we just have fun, lately a lot! ❤
And as the weather was truly great and warm, we did not want to spent to much time inside and me cooking, therefore I made slow cooked beef (almost 2 kg) and prepared it in different ways. I do not remember if I have told you that my husband has gotten new garden grill. Well, if not then yes, we have a new garden grill. Huge! 🙂 It has become his new “toy” and last 4 days, we had almost all food done outside. Simple, delicious and great for beautiful weather. Here, you never know how long will it last.
However, back to slow cooked beef. I prepared it mainly for Cinco de Mayo celebration so you can check it below. I am as well sharing other “Cinco de Mayo recipes” so have a look.
What do you need:
2 kg beef
6 garlic cloves
1 big onion
handful of fresh thyme
potatoes (2 pieces per person)
1 red pepper
handful of fresh basil leaves
salt and pepper
1 – 2 tbs double cream
corn / flour tortillas
2 garlic cloves
hot spicy powder / spicy salsa according to your taste
fresh parsley leaves
To slow cooked beef is very simple and easy, including the preparation. Once you have your beef meat, take a pot from slow cooker and place seasoned meat with ground cumin and crushed garlic cloves in. Add oil, cut onion and handful of fresh thyme on top. Afterwards, add cup of water and put the pot into slow cooker and let it cook over the night. As I have prepared 2 kilos of meat, we had tacos one day and the next day other dish.
Once your meat is ready, shred it and put it back to the pot. In the mean time, you can start preparing salsas. Firstly, take a pan and fry tomatoes, onion and garlic cloves without oil and leave it until slightly burnt. Afterwards, take 2 tomatoes for spicy smooth avocado salsa. Blend those tomatoes together with avocado, double cream, spicy chilli powder or spicy salsa according to your taste and tolerance. And one salsa is ready. The second one – basic tomato salsa. Blend rest of the tomatoes, onion and garlic together until smooth. Cut limes into halves, take Greek yogurt, fresh parsley leave and you can enjoy tacos together with nicely tender slow cooked meat.
Layers: smooth avocado salsa, shredded meat, tomato salsa, squeezed lime juice, Greek yogurt topped with fresh parsley
Shredded beef with potatoes
Once you have enough of tacos, you can finish the rest of the meat with baked potatoes for example. Take potatoes (I always go with 2 potatoes per person) and you do not need to peel them, just cut them into smaller pieces. Put these pieces into the pot together with olive oil and cut red pepper. Season it with garlic salt, stir and cover with lid. Put the whole pot into the preheat oven (185 degrees) and cook approximately 1 hour or until done. In the mean time, you can prepare dip from Greek yogurt as I prefer it than mayo or something similar. Take Greek yogurt, finely chop basil leaves, salt and pepper and mix everything together, put it aside and serve once your potatoes are done. When ready, serve potatoes with shredded beef and basil dip.
